- 3 slices DI LUSSO® Double Smoked Ham (from the deli counter case)
- 1 loaf Taiwanese white bread (12 firm slices)
- 1 large cucumber
- ⅓ cup mayonnaise
- 1 tablespoon sugar
- 3 eggs
Directions
Cut off the crusts from the Taiwanese bread loaf; set bread aside. Shred the cucumber into a bowl and drain water out of shreds; set aside. In another small bowl, prepare the sweetened mayonnaise by mixing the mayonnaise with sugar; set aside.
In a frying pan over medium heat, fry three eggs individually over medium; set aside on a plate to cool.
To assemble the sandwich, lay two slices of the Taiwanese bread on a cutting board. Spread a thin layer of sweetened mayo evenly on one side of each slice. On one of the slices, layer the shredded cucumber on top of the mayo; on the other slice, place one slice of the smoked ham on top of the mayo. Top each slice with an additional slice of bread to make a cucumber sandwich and ham sandwich. Place one fried egg on top of the cucumber portion of the sandwich; place the ham portion of the sandwich on top of the fried egg.
Repeat assembly process for the remaining ingredients.
Cut each sandwich diagonally and enjoy.
