- 4 Mexican bolillo or crusty rolls, split horizontally
- 1/2 cup refried beans, slightly heated
- 1/4 pound DI LUSSO® Pepper Jack Cheese, sliced
- 1/2 pound DI LUSSO® Cajun Style Roast Beef, sliced
- 1/2 cup fresh arugula
- 2 tablespoons red onion, thinly sliced
- 1 avocado, pitted, peeled and thinly sliced
- Fresh lime juice
Directions
Spread bottom half of each bolillo with 2 tablespoons refried beans. Top with cheese, roast beef, arugula, a red onion slice, and avocado. If desired, squeeze a small amount of fresh lime over sandwich.
