Mango Turkey Salad Bowl

  • 1/2 pound DI LUSSO® Golden Brown Turkey Breast, slices cut in half
  • 4 cups rice noodles, cooked
  • 1 red pepper, seeded, cored and sliced
  • 1 mango, peeled and cubed
  • 1 cup julienned carrots
  • 1 avocado, peeled and sliced
  • 2 green onions, chopped
  • 1 cup sugar snap peas, steamed
  • Fresh cilantro, Thai basil and/or mint, chopped
  • 1 lime, cut in wedges

Chili Lime Dressing

  • 1/4 cup fresh lime juice
  • 1/4 cup rice vinegar
  • 2 tablespoons soy sauce
  • 2 tablespoons fish sauce
  • 1 tablespoon chili oil, or more to taste
  • 2 tablespoons brown sugar
  • 1 teaspoon minced garlic

Directions

Assemble salad ingredients. Combine all dressing ingredients in jar with tight-fitting lid; shake to mix. Top with dressing and garnish with fresh herbs. Serve with lime wedges.
