Applewood Chicken Breakfast Toast

  • 2 slices Italian bread, toasted
  • 1/2 cup WHOLLY GUACAMOLE® classic
  • 4 ounces asparagus tips, blanched and cut in half lengthwise
  • 4 ounces DI LUSSO® Applewood Smoked Chicken, thinly sliced
  • 2 large eggs, poached
  • 1/2 cup prepared Hollandaise sauce
  • Salt and pepper, to taste
  • Garnish: fresh chives, chopped

Directions

Spread each bread slice with guacamole. Top with asparagus and chicken. Place egg over chicken. Drizzle with warm Hollandaise sauce.
