Di Lusso Garlic Pasta Salad

Ingredients:

  • 1 pound pasta noodles, such as fusilli or rotini
  • 1 small red onion, diced
  • 1 cup ripe olives, sliced
  • 1/2 cup red bell peppers, diced
  • 1/2 cup green bell peppers, diced
  • 1/2 cup yellow bell peppers, diced
  • 1 small tomato, diced
  • 4 stalk celery, diced
  • 1 cup broccoli florets
  • 1 cup red cabbage, shredded
  • 4 large garlic cloves, minced
  • 10 ounces Italian salad dressing
  • 1 pound DI LUSSO® Deli Meats and Cheese, turkey
  • Leaf lettuce
  • Salad greens

Procedure:

  1. Cook pasta until al dente. Drain and let cool.
  2. Combine pasta, onion, olives, peppers, tomato, celery, broccoli, and cabbage in large bowl.
  3. Add DI LUSSO® Golden Brown Turkey Breast; toss to mix.
  4. Blend garlic with Italian salad dressing and pour mixture over turkey and vegetables.
  5. Toss to coat.
  6. Line salad bowls with leaf lettuce, and fill bowls with salad green.
  7. Place turkey vegetable mixture on top, tossing slightly to mix dressing with greens.
  8. Serving Suggestions: • Any variety of Di Lusso Deli Company seasoned turkey breast can be used.
  9. • Add 3 mashed cloves of garlic to pasta water while boiling.
  10. • For a heavier garlic flavor, sauté the minced garlic in olive oil, 5 – 6 minutes, then combine with Italian dressing.
  11. • Sun dried tomatoes can be added, along with cauliflower florets or pea pods.
  12. • Top with rings of peppers in multiple colors.
  13. • Serve with garlic Focaccia bread and butter.
