1/4 yellow bell pepper, finely diced

1/2 cup daikon radish sprouts, trimmed off the bottom

1/4 yellow bell pepper, finely diced

1/3 cup DI LUSSO® Kalamata Olives, sliced

2 tablespoons tomato relish

2 teaspoons fresh basil, chopped

1/2 cup plain low fat yogurt

3 tablespoons olive oil

Scallion Herb Yogurt Sauce (recipe at bottom)

Yellow Pepper - Kalamata Salad (recipe at bottom)
Procedure:

Prepare Scallion Herb Yogurt Sauce: In bowl, combine yogurt, scallions and dill.

Prepare Yellow Pepper-Kalamata Salad: In bowl, combine yellow bell pepper, Kalamata olives, olive oil, tomato relish and fresh basil.

Spread sunflower seed bread with Scallion Herb Yogurt Sauce.

Divide smoked turkey, cheese, cucumber slices, Yellow Pepper - Kalamata Salad and sprouts among 4 bread slices.

Cover with remaining bread slices.
