Ingredients:

  • 1 cup pecan pieces
  • 1/2 cup maple syrup
  • 2 tablespoons Dijon mustard
  • 2 tablespoons wine vinegar or sherry vinegar
  • 2 tablespoons honey
  • 1/4 cup olive oil
  • 5 cups baby field greens
  • 6 tablespoons cranberries, dried
  • 1/2 pound DI LUSSO® Deli Meats and Cheese, turkey

Procedure:

  1. Heat oven to 350ºF.
  2. In a small mixing bowl, toss the pecans with the maple syrup to coat, and spread onto a lightly oiled cookie sheet.
  3. Bake 15 to 18 minutes, turning with a spatula every 5 minutes.
  4. When pecans are toasted, place on a lightly oiled plate and allow to cool.
  5. Meanwhile, prepare the vinaigrette by whisking together mustard, vinegar, honey and olive oil.
  6. To assemble the salads, divide the salad greens onto plates and top with turkey breast.
  7. Sprinkle with cranberries and pecans.
  8. Drizzle with vinaigrette just before serving.
