Di Lusso Hot Italian Potato Salad

Ingredients:
1 1/2 pounds potatoes (about 4 medium), cut into halves
2 tablespoons butter
1 cup chopped green onion
1 cup sliced mushrooms
2 tablespoons flour
1/2 cup water
1/2 cup white wine
1/2 cup vinegar
4 ounces DI LUSSO® Deli Meats and Cheese, pepperoni, cut into thin strips
Procedure:
In large saucepan heat 1-inch water to boiling.
Add potatoes to saucepan. Return to a boil; reduce heat, cover and cook potatoes 20 to 25 minutes or until tender. Drain potatoes and cool slightly.
Meanwhile, melt butter in a large skillet. Add green onion and mushrooms to skillet. Cook and stir 4 to 5 minutes or until tender.
Whisk flour into mushroom mixture. Cook over low heat, stirring constantly, until mixture is bubbly; remove from heat.
Stir in water, wine and vinegar. Return mixture to stovetop and heat to boiling, stirring constantly. Boil and stir 1 minute; remove from heat.
Slice warm potatoes and place in hot dressing mixture. Cook, stirring gently to coat potato slices, until hot and bubbly.
Just before serving, toss in pepperoni.
