Di Lusso Toasted Muffaletta Sandwich

Ingredients:

  • 1 (4.5-ounce) package DI LUSSO® Pitted Kalamata Olives, coarsely chopped
  • 1 (6-ounce) jar sliced pimento stuffed green olives
  • 1/4 cup chopped red onion
  • 2 cloves garlic, minced
  • 1/4 cup flat leaf parsley, chopped
  • 1/3 (+ 2 tablespoons) cup Italian salad dressing
  • 1 (10 to 12-inch) whole focaccia bread
  • 1/2 pound DI LUSSO® Deli Meats and Cheese, hard salami, sliced
  • 1/4 pound DI LUSSO® Deli Meats and Cheese, Provolone cheese, thinly sliced
  • 1 (8-ounce) package DI LUSSO® Roasted Sweet Red Pepper Strips, drained and patted dry
  • 1 green bell pepper, thinly sliced into rings

Procedure:

  1. In bowl, combine olives, onion, garlic, parsley and 1/3 cup Italian dressing; set aside.
  2. Slice focaccia bread in half horizontally. Drizzle cut sides of bread with 1 tablespoon salad dressing.
  3. Top bottom half of focaccia with salami, cheese, roasted red bell peppers, green bell pepper and olive mixture. Place top of focaccia over filling and wrap in foil. Refrigerate until serving time.
  4. Before serving, heat oven to 350°F.
  5. Place wrapped focaccia on baking sheet. Bake 25 to 30 minutes or until hot and filling is warmed through.
  6. Remove from foil. Let stand 5 minutes.
  7. Cut into wedges to serve.
