Di Lusso Hot Italian Potato Salad

Ingredients

  • 1 1/2 pounds potatoes (about 4 medium), cut into halves
  • 2 tablespoons butter
  • 1 cup chopped green onion
  • 1 cup sliced mushrooms
  • 2 tablespoons flour
  • 1/2 cup water
  • 1/2 cup white wine
  • 1/2 cup vinegar
  • 4 ounces DI LUSSO® Deli Meats and Cheese, pepperoni, cut into thin strips

Directions

  1. In large saucepan heat 1-inch water to boiling.
  2. Add potatoes to saucepan. Return to a boil; reduce heat, cover and cook potatoes 20 to 25 minutes or until tender. Drain potatoes and cool slightly.
  3. Meanwhile, melt butter in a large skillet. Add green onion and mushrooms to skillet. Cook and stir 4 to 5 minutes or until tender.
  4. Whisk flour into mushroom mixture. Cook over low heat, stirring constantly, until mixture is bubbly; remove from heat.
  5. Stir in water, wine and vinegar. Return mixture to stovetop and heat to boiling, stirring constantly. Boil and stir 1 minute; remove from heat.
  6. Slice warm potatoes and place in hot dressing mixture. Cook, stirring gently to coat potato slices, until hot and bubbly.
  7. Just before serving, toss in pepperoni.
